Free is the full app with caps: 10 imported pieces at a time, 5 transcriptions, and 1080p export with a small watermark. Pro lifts all of them: unlimited pieces and transcriptions, 4K export with no watermark, and real instruments for playback.
No. Nothing is deleted, ever. Free keeps up to 10 imported or transcribed pieces at a time, and your own recordings don't count. If you have more than that, every piece stays in your library and on your disk. You just can't import new ones until you are back under 10.
